The Farmer-Chef Connection: Bridging Pasture and Plate
Historical Initiative of Slow Food Wisconsin Southeast • Preserved Educational Archive
The Farmer-Chef Connection was launched by Slow Food Wisconsin Southeast to eliminate intermediaries between regenerative family farms across Southeastern Wisconsin and independent restaurateurs throughout Milwaukee.
By establishing direct supply relationships for pasture-raised poultry, heritage pork, grass-fed beef, and heirloom root crops, the program supported local rural economies while promoting traditional culinary nose-to-tail butchery and whole-animal utilization.

Heritage Livestock Principles
- Rotational Pasture Grazing: Enhancing soil biodiversity and omega-3 fatty acid profiles in grass-fed dairy and beef.
- Heritage Breed Conservation: Preserving Berkshire and Tamworth hogs, known for superior intramuscular marbling suited for dry curing.
- Equilibrium Brining & Curing: Utilizing exact salinity percentages rather than chemical phosphates to maintain moisture.
