Turkey & Meat Equilibrium Brine Calculator
Never serve a dry or salty turkey again. This tool calculates exact salt weights using true Equilibrium Brining (where meat and liquid reach perfect seasoning without the risk of over-salting) as well as modern Dry Brining.

Brine Method & Meat Specs
Equilibrium Wet Brine 15 lbs Turkey
| Ingredient | Measure |

Always keep poultry below 40°F (4°C) throughout the entire brining process. Brine in a dedicated refrigerator or a secure cooler packed with sealed ice packs.
Chef's Aromatic Brine Infusion Guide
To maximize flavor penetration, simmer 4 cups of the formula water with aromatics, then chill completely before combining with the cold brine:
4 sprigs fresh rosemary, 6 sprigs fresh thyme, and 8 fresh sage leaves bruised lightly.
1 whole head of garlic crushed in half, 1 quartered orange, and 1 quartered yellow onion.
2 tbsp black peppercorns, 4 dried bay leaves, and 1 tbsp whole allspice berries.
Frequently Asked Turkey Brining Questions
What is equilibrium brining?
Traditional recipes use a hyper-concentrated 5%–8% salt brine where leaving the bird in an hour too long creates an oversalted roast. Equilibrium brining calculates the exact total weight of meat plus water and adds salt to reach a finished target salinity (typically 1.5%). Because the entire container balances at 1.5%, it is mathematically impossible to over-salt your turkey even if left for an extra day!
Should I rinse the turkey after brining?
With equilibrium brining, there is no need to rinse because the surface salt level equals the interior salt level. Simply pat thoroughly dry with paper towels. For maximum skin crispness, leave uncovered on a wire rack in your refrigerator for 12 hours before roasting.
Can I brine a frozen turkey?
No. Your turkey should be mostly or fully thawed before submerging in wet brine or rubbing with dry salt. Brining a frozen block creates uneven salt absorption and ice melt will dilute the calculated salinity.
